Today, the growing worldwide interest in wine and its complexities and varieties has created an international market valued at $304 billion annually. For the student just beginning to study wine, this course will help take the first steps in understanding the physiological process of tasting. The first module will explore the types of wine and what will set up your own tasting. We also begin to build a sensory vocabulary. In Module 2, review the world's classic wine types and organize specific wine flights. Later we will examine the various faults and defects that can appear in wine, as well as techniques for detecting problems. In week 4 we will delve into the complex world of food and wine pairings, and their "seven deadly sins". The course will culminate in a peer review project where you will apply the knowledge and sensory techniques you have developed throughout the course to evaluate a specific wine.
